Zucchini boats filled with sunflower
seeds and paprika on fennel
and tomato vegetables

 

Ingredients:    

  • 2 medium sized zucchini     
  • 1 x bell pepper yellow
  • 1 x bell pepper red
  • 12 cherry tomatoes with stem
  • 2 medium sized fennel tubers cut
  • 120 g dry roasted sunflower seeds
  • 1 red onion     
  • 800 ml of tomato juice
  • 200 ml vegetable broth
  • 2 tablespoons tomato paste
  • Salt, pepper, olive oil
  • 2 tablespoons chopped fresh herbs: e.g. Wild garlic, thyme, sage, parsley, rosemary
  • ½ bunch of onion also finely cut into rings
  • Basil and rosemary for garnish

 

Preparation:

Halve the courgette and hollow it out using a ball cutter. Then fry the halves of zucchini in a hot grill pan with olive oil from both sides.

Cut off each of the red and yellow peppers 4 rings, also fry them in the grill pan from both sides. Cut the remaining peppers into small cubes.

Roast the half red onion into olive oil, add the diced paprika and fry. Then add the tomato paste and sunflower seeds and season with salt, pepper and the chopped herbs. Then add the pepper and sunflower seed stuffing to the halves of the courgette and cook for 10 minutes at 150 degrees in the tube.

In the meantime, cut the remaining half onion into strips and fry them together with the fennel, also cut into strips, with a little paint.

Then fill up with the tomato juice and the vegetable broth and let it simmer. Fry cherry tomatoes with a small sprig of rosemary and salt in olive oil. At the end, turn the onion belly under the fennel-tomato-vegetables and season with salt, pepper and chopped parsley.

 

To serve:

First put the fennel and tomato on a plate and place the zucchini boat on it. Garnish the boat with the pepper rings, the cherry tomatoes and with fresh rosemary and basil. Finally, drizzle with a little olive oil.
