Crispy baked apple fritters with cinnamon and sugar on vanilla sauce

Ingredients for apple cakes:

  • 3 to 4 apples
  • (e.g. Royal Gala or to taste)
  • 150 g 150 flour and flour to work with
  • 15 g sugar
  • 1 pinch of salt
  • 100 ml beer (e.g. Flechterla from the Püls brewery in Weismain)
  • the beer should have a sweet taste
  • 75 ml milk 3.5%
  • 2 eggs
  • 2 l cooking oil
  • 100 g sugar mixed with 10 g cinnamon
  • Dried apple rings, cranberries, physalis,
  • whipped cream and mint for the garnish


Ingredients for vanilla sauce:

  • 500 ml milk 3.5%
  • 60 g sugar
  • 2 egg yolks
  • 15 g corn starch
  • half a vanilla pod


Preparation of the vanilla sauce:
First, scrape out the seeds from the vanilla pod. Then boil 2/3 of the milk with the vanilla pulp. Mix the remaining cold milk with the cornflour until lump-free.
As soon as the milk starts to boil, stir in the milk and cornstarch mixture. Bring the mixture to the boil, stirring constantly.
Beat the egg yolks and sugar until frothy. Then add the vanilla milk to the egg mixture, stirring constantly. Finally, sweeten the vanilla sauce to taste.

Preparation of apple cakes:
Wash the apples, rub dry and then peel. Then remove the core with the help of a corer. Now cut the apples into slices approx. 1.5 cm thick. You should expect about 3 slices per person.
Now mix the flour, salt, sugar, beer, milk and eggs into a smooth dough. Leave the dough to rest for approx. 20 minutes and stir well again.
In the meantime, heat the cooking oil in a pan to approx. 170° C.
When the oil is at the right temperature, fry the apple slices in the oil, dredging them in flour and then pulling them through the batter with a spoon. The apple slices should be golden yellow on both sides. Turn the apple slices once while frying.
Then remove the slices from the oil and place them on kitchen paper so that the oil can drip off and be absorbed.
Then turn the apple cakes in the cinnamon-sugar. Pour the vanilla sauce onto the plate beforehand, or pour a stripe onto the plate. Drizzle the cream on top and garnish the plate with the dried apple slices, cranberries, physalis and mint.
The finished apple cakes are then served on top of the vanilla sauce. A scoop of vanilla ice cream goes particularly well with this.
